Chicken Casserole

  • 1 piece of chicken per person (skin removed)
  • Approximately 1 pint vegetable stock
  • 1 large carrot chopped
  • 1 large onion chopped
  • Herbs & seasoning

 

  1. Place all the ingredients into a casserole dish and cook in oven for approximately 1 hour (or until cooked).
  2. Thicken the casserole with corn flour paste (2-3 teaspoons of corn flour mixed with a little water) if required and return to oven for a short time.
  3. Serve with boiled new potatoes and vegetables.
