Home-made vegetable burgers

(with salad in a bun)


(Makes 4)

  • 400g can of mixed beans (rinse and drain)
  • 2oz grated carrot
  • 2oz sweetcorn and/ or peas (tinned or frozen)
  • 20z sage & onion stuffing mix
  • 1 egg beaten 2 tablespoons flour
  • 1 tablespoon sunflower or olive oil 4 rolls (preferably wholemeal)
  • Sliced tomatoes
  • Lettuce


  1. Mash the mixed beans with a fork or potato masher.
  2. Stir in the carrot, sweetcorn, peas and stuffing mix.
  3. Bind this with the egg so it forms a stiff mixture.
  4. Divide mixture into 4 and shape into burgers shapes (with floured hands).
  5. Place the burgers onto foil under the grill, and lightly brush with oil.
  6. Grill for 4-5 minutes until lightly golden.
  7. Turn them over and brush lightly with the rest of the oil, and then grill for another 4-5 minutes until cooked through.
  8. Serve in a bun with the tomato and lettuce.
