Pasta with tomato and vegetable sauce

  • 3-4oz pasta (any shape) per person
  • Chopped vegetables- onions, peppers, courgettes, peas, mushrooms, carrots, broccoli, sweetcorn, peas, leeks*
  • Tinned tomatoes (1 can for 3-4 people)
  • Mixed herbs
  • 2 teaspoons sunflower or olive oil (measure- don't pour!)

 

  1. Place the vegetables in a pan with the pepper, mixed herbs and oil.
  2. This will take around 10 minutes.
  3. Stir in a tinned chopped tomatoes and simmer for a few minutes.
  4. Add a small amount of salt if needed.
  5. Serve on cooked pasta of your choice.

 

*As much as you like, try a handful of chopped veg per person as a rough guide
