Shepherd's pie

  • 1 medium potato per person
  • Small amount semi-skimmed milk
  • 3oz lean mince per person
  • Chopped vegetables- onions, peppers, courgettes, peas, mushrooms, carrots, broccoli, sweetcorn, peas, leeks
  • Tinned tomatoes
  • Mixed herbs

 

  1. Boil the potatoes and mash with a little milk.
  2. Cook the mince and vegetables as in the above recipe.
  3. Place the mince mixture in an oven dish and spoon on the mash.
  4. Then cook in the oven until brown on top.

 

Tip: reduce the amount of meat used by adding some tinned pulses. This will reduce the fat and increase the fibre.
